pumpkin power bitesPumpkin season is here and whether you are all in or just need a little touch of pumpkin flavor, these pumpkin power bites are a must.

I love this recipe because it’s lightly sweetened so you’re not getting a ton of extra sugar like most power bite recipes. There are just a couple of tablespoons of pure maple syrup and chocolate chips to sweeten these up.

These bites are the perfect after-school snack, a little mid-day treat, or take them with you when you’re on-the-go for a healthy, but yummy, snack on the run.

The great thing about these bites is the fiber content. It is why they are so filling. With oats, chia seeds, and flax meal you’re getting lots of good-for-you fiber. Fiber has so many benefits! It’s one of my weight loss hacks that actually works!

Pumpkin Power Bites 

Makes 14 Bites

1/4 cup pumpkin
1 cup oats
1/4 cup peanut butter (no sugar or oil added)
1/2 tsp pumpkin pie spice
1 tsp cinnamon
2 tbsp maple syrup
2 tbsp shredded coconut
1/4 cup walnuts, chopped
1/2 cup mini chocolate chips
1 tbsp chia seeds
2 tbsp flaxseed meal

Mix all ingredients together in a food processor (or bowl). Use a cookie scoop to scoop into balls. Store in the fridge or freezer.
