This recipe is for those busy weeknights when you don’t feel like cooking but want something healthy and simple. It’s a no-fuss recipe and impossible to mess up.

It features one of my favorite root vegetables: sweet potatoes. I can’t get enough of this nutrient-dense veggie. Sweet potatoes are full of vitamins B6, C, and D. Plus, they’re a good source of iron, magnesium, and potassium.

Mealtime during the week doesn’t need to be stressful or result in the drive-thru. I’m all about quick, easy meals because I don’t have hours to spend in the kitchen either. That’s why I’m so excited to share this recipe with you. I know the struggle of wanting healthy food on the table each night that your whole family will love.

These loaded sweet potatoes are a huge hit in our house and a favorite among my clients. They’re packed with flavor and so easy to whip up. The sweet potatoes have a nice sweet/mildly spicy flavor — it will be hard not to eat the whole pan. Trust me, they’re that good. Top with ground beef, bell peppers, tomatoes, avocado, and green onions for an easy + simple + delicious meal.

Loaded Sweet Potatoes

Ingredients:

6 small sweet potatoes {about 2 pounds}, diced

1 teaspoon paprika

1 teaspoon salt

2 teaspoons garlic powder

1 teaspoon ground cinnamon

2 tablespoons extra virgin olive oil

1 lb ground beef

Your favorite toppings: avocado, green onions, tomatoes, bell peppers, etc.

Directions:

  1. Preheat oven to 450 degrees.
  2. Mixed diced sweet potatoes with spices and olive oil. Put on a baking sheet in an even layer.
  3. Bake for 10 minutes, take out of the oven to stir and then bake for another 10 minutes or until nice and crispy/tender.
  4. While the sweet potatoes are baking, cook ground beef in skillet until cooked through. Feel free to add a little garlic powder and salt to beef.
  5. Chop your toppings while ground beef is cooking.
  6. Top sweet potatoes with ground beef and favorite toppings.

This week, skip the drive-thru, remove the stress from mealtime, and serve a meal your whole family will love!
