Fall is about Food!

I don’t know about you, but fall means more than crisp leaves and buffalo plaid scarves. Fall means FOOD: apple crisp, pumpkin muffins, squash, roasted root veggies, and so much more! It is easy to plan a healthy menu surrounding fall staples with the abounding harvest.

I was asked to create an original recipe with the foods in my box this week. Given that our family eats gluten-, dairy-, and sugar-free, I’m used to modifying recipes and playing with ingredients until something is just right, so I happily accepted the challenge.

First, know that this recipe will be SIMPLE. Like all moms, I’m short on time and energy by 5 p.m. dinner prep. I have a newborn, I homeschool my oldest daughter, I work full-time from home, and we have activities four nights of the week, so I’m all about easy, simple, few-ingredient recipes that don’t take a ton of prep or bake time.

door to door recipe pic logoUsing butternut squash, bacon, and shredded pork, we whipped up a new recipe my daughter called “Squash Bacon Surprise”:

  1. Peel butternut squash and cube into half-inch pieces. Toss with olive oil. Roast at 400 degrees for 25-35 minutes depending upon how soft you like it.
  2. Place bacon on cookie sheet lined with foil. Bake at 400 degrees for 20 minutes. Cool and chop into small pieces. We had bacon from Des Moines Bacon & Meat Company and loved it.
  3. As bacon is cooling, drizzle squash with maple syrup mixed with dried sage, salt, and pepper, and mix. Return to oven. Bake for an additional 10-15 minutes until syrup is caramelized. Remove from oven, sprinkle more sage, salt, and pepper to your liking.
  4. We had some shredded pork left from the night before, so I tossed that in as well. I followed this recipe for making easy shredded pork.

The flavor was amazing with the sweetness of the squash and syrup mixed with the salty bacon and pork. It was a hit with all of us, especially my 5 1/2-year-old! We ate it for lunch the next day and it was even yummier!
